We need to talk about the three P’s - Plums, Poppy Seeds, and Porridge! Why are these ingredients powerful - because together, they offer a great variety of vitamins, minerals, nutrients, and a big kick of dietary fibre!
The humble plum contains vitamins B1, B2, B3, B6, and E. If that wasn’t enough, they also have the minerals potassium, fluoride, phosphorous, magnesium, iron, calcium, and zinc. If you’re still not a plum convert, you should know they’re a great source of dietary fibre, low in calories, and have no harmful fats!
Just 1 teaspoon of poppy seeds provides a significant amount of calcium, iron and zinc. At this point, you’re well on your breakfast way to an excellent start to the day!
All these vitamins and minerals are served on a bed of porridge. The high-fibre content in rolled oats makes this brekkie easy to digest. Rolled oats also help to reduce high blood cholesterol, and prevent heart disease.
The only difficulty in this dish is shopping for fresh produce! Make the effort, and start your day in a powerful ‘P’ way!!
1 cup + 2 tbsp. rolled oats
4 tsp. poppy seeds
1 cup unsweetened almond milk
2 cups water
2 plums, thinly sliced
2 tbsp. maple syrup
2 tbsp. roughly chopped hazelnuts (or any nut)
1. Place the oats, poppy seeds, almond milk and water in a saucepan and bring to the boil. Reduce to a simmer and cook for 8 – 10 minutes, stirring occasionally. The oats should be cooked through and the porridge should be thickened. Add a little more water to loosen if necessary
2. Divide porridge between 2 bowls, top with sliced plums, maple syrup, hazelnuts and serve
