2/3 cup rolled oats
1/3 cup shredded coconut
1 cup milk of your choice
1/3 cup water
1 ripe banana, mashed
1 cup frozen raspberries*
Serve with extra frozen raspberries, kiwi, bee pollen**, natural peanut butter and shredded coconut or your favourite porridge toppings!
place all porridge ingredients in a medium saucepan, bring to to the boil, then reduce to a medium heat, stirring contantly
Add the raspberries and continue stirring until porridge thickens (about 7 minutes). I like to squish some of the raspberries to make the porridge a beautiful shade of pink!
Divide between 2 bowls, top with porridge toppings and serve immediately
*You can use frozen blueberries, blackberries or a combination of all 3
**Bee pollen is a pollen ball, which has been packed by worker honey bees into little edible pellets. It can be found in most health food stores.
